Choose unblemished, sweet-smelling mangoes. Cut the cheeks from the mango and thinly slice the flesh. Scoop any remaining flesh away from the skin and stone with a large spoon.
3/4 cup of mint leaves
1/4 cup of lime juice
1 teasppoon of olive oil
1 teaspoon brown sugar
2 lebanese cucumers, quartered lengthways
2 mangoes, thinly sliced finely
Grated zest of 1 lime
Place 1/2 cup of mint leaves in a small blender or food pocessor with the lime juice,oil and brown sugar. Process untill smooth.
Place the cucumbers, mango slices and remaning mint leaves in a salad bowl. Drizzle on the dressing and toss gently to combine. Serve topped with lime zest.
